Adding to this, if you want to go for surfing lessons, the northern coast of Spain has some nice beaches for surfing too. The water is quite cold, there's an upwelling right on the northwest corner of the Iberian Peninsula, which also makes it for a prime destination for shellfish.
If you're more of a manatee and rather enjoy snorkeling on swallow waters Portugal's Algarve is quite nice for that. If you'd rather do it on warmer waters maybe check to spend a day in Tabarca on the eastern Spanish coast.
There's plenty of mountain chains with nice hiking trails along the coastline of the Peninsula: Sierra de Grazalema and Sierra Nevada on the south or Picos de Europa on the north are prime examples, but there's literally too many to mention all.
I'd also consider crossing into UK territory and visit Gibraltar for a day if you're going to the south of the Peninsula, go up the rock, see the monkeys, look at Africa across the strait, and get cheap(er) booze.
