That is not true. Traffic analysis can be done at AWS which also has way too much metadata at this point.
Your criticism of centralization while a point puts SimpleX at worst in the same boat as Signal without being able to identify you and with options to only use .onion. But that point is invalid as there are increasingly more servers and I run a set of them myself.
SimpleX is not perfect but I don't see any area where it is worse then Signal (security wise).
