Trying taiyaki at a local cafe (a cute Japanese street food - stuffed, fish-shaped waffles) got me thinking.
Someone should start a restaurant where customers "fish" for taiyaki.
Have an aquarium with an opaque back wall on a counter. Customers take a "fishing" rod and line and put "bait" on the hook according to what they want to order. They hang it over the far side of the aquarium. When the food is ready, the line is jerked, and the customer pulls the taiyaki up and over to their plate.
