So, I think I'm gonna give up using the Framework Audio Expansion Card for general use due to problems with various applications unable to pick up on the headset microphone side of the connection.
I picked up a UGREEN USB-C to 3.5mm cable and it was picked up automatically by KDE, Zoom and Audacity.

I also picked up an Anker version of the cable and it also worked just fine.
