I think I just found the reason why I'm struggling with my 'good' lame but getting results with the disposable one
Look at the corners of the respective blades where they enter the dough. The 'good' lame blade is rounded at the corner & the cutting edge doesn't go completely around the curve. End result, ripped dough
The cheap one has a 90° end to the blade with the cutting edge extending to the very end of the blade and slightly up and around the vertical
Time to look for new blades!
