First, if "there is only one Universe" was a legitimate argument against using probability and statistics in cosmology, it would also be a legiimate argument against using probability and statistics when playing poker. "There is only one Universe, and in this Universe you either have a royal flush or you don't. It makes no sense to say you have one with probability 0.005%." I believe you are stuck in a frequentist interpretation of probability theory which is just not up to the job for cosmology. Maybe try taking a more Bayesian stance.
