I have read much about it and examined their privacy policy as well as reviews about it before deciding to use it myself for DnD but also for my work. I use it for work since a couple of months now.
You can export your data with Anytype, either in Anytype format, JSON, or Markdown. I always keep local backups of my Anytype spaces.
I personally do not think their pricing model looks suspicious, it makes sense to me actually. Free plan for small users and people needing it for more serious projects pay yearly. That is exactly what happens to me. I use a free plan for my DnD game, but purchase a plan for my work, where I need more storage and more viewers. Proton uses a similar pricing model to cover for free plans.
