I've done it before, but I want to mention #Actual again. It's a finances app that implements envelop budgeting and it's fantastic. It used to be a paid, proprietary SaaS, but the creator experienced some pretty bad burnout, and instead of killing it and forcing people to find something else, he gave it all to the community as open source.

It is a little complex (at least to me), but it's also very pleasant and genuinely the best open source budgeting app I've ever self-hosted.
