Today I'll make Chukku Kappi in the InstantPot - just enough for a hot cup and one cold for later. (Why do I use an Instant Pot? See yesterday's post.)
It's a dry ginger (predominantly) spice tea that can contain coffee (mine won't), and is very popular in South India. You can even buy "instant" versions.
Generally it is made by grinding the spices into a powder, then that is stored and used to make the "coffee" by adding hot water to a tspn or so of the powder. .
I'll just use the spices without grinding for making in the IP - dried ginger (lots), coriander seed, cumin seeds, long pepper, black pepper, liquorice root, tulsi leaves and turmeric. Like many #ayurvedic powders, it is based on Trikatu, the trinity of spices dried ginger, long pepper and black pepper, that together have lots of medicinal properties.
(There are simpler mixes but I like this mix. You can google Chukku Kappi or chukku coffee to see differences. All begin with dried ginger.)
