Most Chinese IME is done using pinyin these days, that's probably the most "mature" Chinese IME available on Linux.
There are efforts to add handwriting support, but it might vary.
There's this one, which an open source dev hacked together: https://github.com/Saren-Arterius/google-chinese-handwriting-ime
The fcitx5 project also has a handwriting module that you can install.
I haven't tried any of these input methods but they might work for you.
