Here I am avoiding the whole race/class thing and confessing that as a cook, I virtually always add a little heat to any sauce or soup I am making--and keeping it semi-secret. Why? Because 20 years ago my husband decided he couldn't handle hot sauce of any sort and should avoid it. He has no idea how many gallons of Tabasco he has consumed since then. And I know a dozen other people who also believe they can't eat hot sauce. Little do they know....
