Is there a name for the phenomenon where you put hot chocolate powder in hot water and the surface of the powder forms a sticky goo that encapsulates a blob of dry powder, inhibiting further dissolution?
it's similar at a high level to the Leidenfrost effect (surface behavior preventing the bulk material from interacting with the surrounding fluid) but completely different physics.
