1. Be fair; The only reason Signal managed to do what it did is because they didn't give a fuck about interop, and went their own way, whereas Email and xmpp folks kept wanking in mailing lists arguing instead of delivering end to end encryption.
2. Them having control of the server is the only way to make sure that they only metadata available to the government is the most recent, not the entire history.
3. If non of that pursuades you and you think Matrix architecture is better, first you have to give Signal credit for pioneering, and second you should be careful who is listening to you, because most people won't fallback to Matrix, they will flat out use Telegram or some other garbage.
