A single file ActivityPub Server (npub1ghv…n7nx) I was meaning to do exactly this but never got round to it...
I think people underestimate the power of a single-user instance that could be easily deployed to very 'dumb' web hosting, without needing the level of care and feeding that standard instance software demands.
