You have inspired me. Ever since I saw your post I have been craving the crepes of my youth, which these are not, so after White people church I whipped up these Swedish pancakes which are somehow different from everything else you mentioned, but basically a variation of the same thing.

Phannkucken aka German style pancakes are not Dutch Babies.
They are cooked on the stovetop in a thin layer of lightly rippling oil (Avocado oil here), so as to fry them. The edges get crispy while the body is light and airy, not fluffy like American style pancakes. It's thicker than a crepe but thinner than American style pancakes and Dutch Babies.
I like to swirl the batter around to create more crispy edges to enjoy.
