Even some “organic” grains can be spayed with glyphosate to dry out for harvesting. He covers fiber binding to cholesterol, gluten like protein and insulin-resistance, but here’s some stuff Dr. Berry didn’t cover:

- oxalates binding to calcium to cause kidney stones
- if not soaked or fermented to reduce phytic acid, it chelates to calcium, zinc, magnesium, iron and copper in the diet to form phytate which inhibits enzymes pepsin, amylase and trypsin, needed for protein and starch digestion in addition to blocking those nutrients from absorption
- oats “high” in zinc, magnesium, manganese, iron, but see previous on bioavailability
- heavy metals drawn into plant from soil

Some of the anti nutrients can be counteracted with dietary animal fats A and D, but it’s just WORTHLESS PEASANT FOOD.

This is a good primer. Happy to dig for more depending on the direction you want to go; you could talk about how the basic store-bought stuff is insanely loaded with glyphosate which is linked to all sorts of horrible problems, or you could talk about how even the most clean, organic stuff is full of plant defense chemicals that are still horrible for you, and none of the "nutrients" are bioavailable for human digestion
