I'm back with scale batteries and a second breakfast, so it's time to move on with the grain bill.
I always thought that Westmalle nailed the balance between some dark fruit caramelyness and a touch of roast, so I base my grain bill on theirs. Stan Hieronymus' book "Brew like a monk" lists "Pilsner, caramel and dark malt" as well as "dark candi sugar". For me this translates to Pilsner Malt, Weyermann Special W and Carafa 2 Special.
