Because it falls apart, to stay as solid as hers in the video you either have to mix the cottage cheese with the parmesan to create a solid "dough" or use a creamy cottage cheese, and drain the water.
Normal cottage cheese is grainy and does not stick together, it gets messy while eating but it tastes good.
Gonna try it again
