My guess is it all comes down to insulin sensitivity, and that there is a large genetic component to that. I put on weight easily, so I’ve done best and definitely feel best on carnivore. My wife can handle carbs without much problem. Hopefully some day we will have a test to guide us, but for now it’s largely self experimentation based on overall feeling of well being, weight control, and some metabolic lab indicators.
