Thoughts on food
As I ate a delicious fresh papaya this morning, I thought about how food isn’t just energy and nutrients. More important than anything, food is information
Nutrients are both building blocks that the body uses to repair tissues and elements required for critical cellular functions
Soil health is what determines nutrient density. Dirt that is loaded with fertilizer might grow fruit but that fruit is very different than fruit grown in healthy soil
Principle: the health of the soil determines the health of the fruit
One of the most critical yet overlooked elements of the food we consume is the light it was grown within
When we consume fruit grown 10,000km away in a radically different light environment than where we live, we give our bodies confusing information
When we eat fresh, local fruit grown in the light environment where we live, we give our bodies the right information to make use of the nutrients and energy packed within the fruit we’re eating
In summary: fruit grown locally in nutrient dense soil is not only more delicious, it’s far better for our health
