I guess it's influenced by what people are normally reading. A friend coaxed me, a YA fantasy reader, into reading Kate Atkinson's historical fiction Shrines of Gaiety earlier this year and it was just about the slowest-paced book I've ever come across, yet Storygraph says medium-paced!
I don't think read time is a good indicator though; that's much more related to enjoyment than pace for me.
