I may have made a fortuitous 'mistake' on the White Bread with Poolish.
I got called away urgently just after mixing the final dough and did not get the 4 folds in.
I got back to it an hour late, folded the first time and got results better than my usual fourth fold. Beautiful dough stretching with strong gluten strings.
I said I was going to stop messing with this dough but ... 🤔
May explain the levain based result as well. It has 3 folds in the first hour and then a last one later.
