Rammed earth is beautiful, but requires 7% Portland cement for exterior walls and seismic zones. As the walls are thick (and need beefy foundations), it works out to have as high carbon as conventional buildings (lower operating costs/carbon though).
Strawbale is lower carbon. As is timber framed, hempcrete insulated. This slip form cob method looks interesting.
