You absolutely can, there is a docker image so that you can run it locally with a single command:
docker run --rm -it -p 8080:80 git.v0l.io/kieran/snort:latest
Then just open
http://localhost:8080 and you're running the latest version.
This is the same as how Umbrel runs snort, but it's usually an older version, not the latest build.
