Day 1 - Fave Pilot Episode
My favorite pilot-centric episode of Star Trek is probably 2000's "Drive", from Star Trek Voyager.
Not only did Tom and Harry rebuild the Delta Flyer, but Tom and B'Elanna got to work on their relationship.
It also introduced a really cool variation of Starfleet uniform we never saw again -- and I really liked the white shoulders and gray midsection.
