Prepping a batch of #vegan mentsuyu dashi infused soy sauce.
I use dried shiitake mushrooms and kombu seaweed steeped in a blend of soy sauce, mirin sweet rice wine and sake for a day and then simmered for 3 minutes and then strained.
It’s one of the tastiest variations of the humble soy sauce! #japanesefood #ビバ丼
