I dont think it's the prep - roast v roast. I think it's the grass v grain. New Zealand lamb, sold in Ireland, is our go to 'out of season', also grass fed - although, I'm decades out of date on this.

The lamb I buy here tastes like mutton. Old, musty.🥴
