While the US has a huge range of chillies, we have a very small range, and it is more difficult/$$$ to get other fresh varieties. I just use whatever I have on hand, no matter what is specified in the recipe.

But "peppers"? It can mean anything from sweet capsicums to the hottest of chillies. 🤷‍♀️
