I just read the blurb on Fastmail and they say emails are not E2E encrypted, and that requires PGP or something. OK, makes sense. But then they go on to say "emails are already encrypted at rest and in transit". Do they mean "encrypted between client and server" and "encrypted in the data center, but we retain keys so that we can serve warrants as law permits"?

Perhaps I'm just overthinking this, given emails are generally plain text. Ultimately, I'm just looking for a company who aren't going to casually train LLMs or otherwise act fast and loose with my data.

I thought I was savvy in this space, but shopping around I realize I am not.
