I'm adapting this dish to use broccoli (love) instead of zucchini (hate). It calls for a 45-min cook time which feels like A LONG TIME to cook broccoli — I have horrid memories of soggy khaki broccoli from my childhood! I'm guessing 20-25 mins tops? I want it to be quite soft but still green and not sulfurous...
