I think that in Doom 1 the E1 is indeed different from E2 and E3, I can see it in the mappers. E1 was actually coherent. It had a progression, in both a setting and gameplay pace. E2 and E3 are experimental, stitching together everything in layout.
Tho sometimes E2 and E3 do give off bangers like E3M7. Good pieces here and there too.
E1 was more liberal with barrels of explosions as well.
Frankly, I think that's why I like Atari Jaguar family Doom 1 levels so much (Jaguar, 32X albeit very incomplete, PSX...). They had to simplify levels in layout and textures, but that allowed them to better put Doom 1 together up the pace.
