"Big Ag" isn't like a mysterious cabal of supervillains trying to make the US sicker or whatever. They're capitalists, so they're a normal and open consortium of supervillains who don't care if what they do makes people sick.
The US food system is based entirely around export because that's most profitable. Domestic food markets are flooded with export-ready foods because that saves costs. Our food in the US isn't, like, mysteriously bad: people shouldn't have as much export-ready food as most of us do. That's because those foods are generally designed to be extremely shelf stable and extremely easy to ship, and everything else is a secondary consideration. Even hyper-palatable foods come mostly from a lineage of development that starts with trying to cover up off flavors or lack of flavor from the processes that makes foods more stable and shippable. When we consider *how* our foods are unwholesome qe don't usually ask *why*, or we stop asking why after we realize it's because of profit seeking.
