I had bought a pack of matcha-flavoured lotus bean paste to use in mooncakes, but then never got around to making them. So today I turned half of it into neri yokan, a agar-based jelly with red bean paste.
The lotus beans are much more 'starchy' so the texture is more firm and 'chewy' than normal yokan, but it's nice. Great with a cup of tea, though the matcha flavour is not very pronounced.
