A scenario I'm thinking about is a user who wants to get their money out of fedi completely.

In that case, afaik, they would be limited by the liquidity of the federation's lightning provider. I don't know if a federation can have multiple gateways. In that case, it's probably not an issue, and then I would agree it would be better not to show any gateway details at all.
