My usual paper for most of my B&W work is Photo Rag Baryta, which I've been working with for about 10 years. It's a glossy, warm white heavy textured barium coated paper made by Hahnemühle.
I've recently been experimenting with a newer version, Photo Rag Matte Baryta, which renders as less glossy in the unprinted/white areas but becomes glossier in the darker areas. It's an interesting effect, but I'm not yet sure if I like it.
