I haven't used qownnotes, but logically for Qt-based software, all you need to have on your system is that Qt version. Therefore no need to have Plasma software stack. Tha same gors for gtk too. You can confirm this by checking out their Flatpak. Additionally, it seems that they also provide AppImage, so no need to install anything if you don't want to.

I personally avoid installing GTK tools (nasty dev culture), but if I have to, I either use Flatpak or AppImage.
