- 8 lbs apples, cored & loosely chopped, peeling optional (I have one of those peeler/slicers)
- 1/4 c water
- 2 T lemon juice
- 2 T maple syrup
- 1/4 t salt
- 1 t vanilla
- cinnamon optional
Put it all in a pot and bring it to a boil, then reduce to low simmer. Cook down uncovered stirring occasionally until it's about the "wetness" you want. Cover & cook more until it's the "softness" you want. Mash with potato masher. Freeze in pint or quart containers.
