For the soup: whatever seafood or fish discards you have. Fish bones, heads, whatever. One carrot, one leek, one small onion, bay leaf, one garlic clove. Really simple stuff.
Only "special" thing I added was the pepper paste, which is totally optional. I personally would NOT add tomato at all in any case, grated, concentrated or otherwise.
Today I went with shrimp peels because my fishmonger got me some really cheap shrimp tails (that she peeled for me because she's a love) and some mussels. I didn't miss or need the shrimp heads as these two items impart more flavor than required really.
Do the fish first with a little olive oil, and once it starts to caramelize, add a splash of ranci and brandy and flambee the f out of it.
Then add the veggies, stir fry lightly, and add water. Bring to a boil, turn the heat down to the lowest possible, boil/infuse for 25-30 mins. Then turn off and let it finish infusing for 30 minutes at least. No lid.
