In NW Europe November was always the butchering month. Lots of animal parts in the larder. Same with stored apples, brassica, chestnuts for carbohydrates etc. The hard part is Lent. One last hurrah to finish the stores and then you have to wait for the first spring harvest, lambing time. In olden times, new year was the 25th of March. Sorry to infodump medieval history.
