Today I'm making snow shoe hare stew.
Since there is not a ton of meat on a snow shoe hare, I'm starting by removing the larger portions (legs, thighs, and loin)
One I do that, I make a stock with the left over carcass.
I brown an onion, some garlic, celery, salt, pepper, and a bay leaf together in a pressure cooker, add the carcass, and then cook it for an hour or so to break down the connective tissue and extract the minerals from the bones.
