When it begins with a well-made stock, it has not only the flavor but also the nutrition of the bone(s) and other scraps you simmer for a long time with aromatics to extract as much savor and food value as you can from a leftover roast (beef, lamb, chicken, turkey, etc.) or ham. Then the vegetables and, if you choose, additional meat, you cook in the stock to make a pot of soup yield their vitamins and minerals to the pot, so that each bit is a bite of health.
