Started making bread this morning. Realized that the yeast I had was _not_ instant _after_ adding it to the recipe, so I went "Okay cool lemme just proof it _in the dough_ that will TOTALLY WORK [and if it doesn't it'll be a fun learning experience anyways!]"
then I realized that I have no sugar. I am currently debating between seeing what happens if I try proofing it with erythritol orrrrr figuring out how much of an energy drink has the right amount of sugar 😅
