Damn, it's pretty amazing. I have so many things to say.
The disease part is pretty interesting, specially the "push the soul out" but what is the end result? Will it leave an empty body? Or will it transform the body into something else? Do the Baroque fear the infected? Do they quarentine them or exile them?
On many other things it reminds me about things i wrote for my setting. Like the odd colored Baroque being treated as cursed or an ill omen much like Aldera, for being a Starry, is treated as if she's less than everyone else or even cursed. Or the mimic monsters since i wrote about the Doppelgänger, a creature that infects a person stealing their memories and all they learned and leaving behind someone with a broken mind while they go on to become a perfect imitation of the infected that they will use to infect a new person that they consider a perfect host.
I also wonder if the world of Baroco has regional differences that are significant. Like how you say that the Baroque are separated by regions and that the odd colored ones are exiled to the south. Is there a particular reason? Are there many differences between the regions of Baroco?
