There are 3 levels of possible moderation - the relays you select are hosting your posts. If you did something such that they no longer wanted to host your content, they can delete it. You can self host your content if you like (slightly harder than running a bitcoin node).
Your client - damus, amethyst, nostrgram, plebstr, whatever you are using, collects content from the relays you use and presents it to you. A client could implement a filter on content (but I don't think any have yet).
You can filter content for yourself by muting or following. If you mute content in a particular client, then that client will not show you posts from that person anymore. There is no assurance that that will happen - but clients shouldn't have any reason to violate your wishes.
