It's a very old-fashioned name which only an older woman would have, but "Eunice" is an old-fashioned name too but nobody names a witch that way.
I think it's just the slightly clashing, harsh-sounding syllables, the hard G, the short As. It SOUNDS like the name a scary/threatening person would have. We're in Kiki/Bouba territory.
