So Mom's gluten intolerant, and over the years we've switched from attempting GF breads (something about most of them still upsets her guts) to cornbread.

However, most boxed mixes have regular flour in them, and the one actually GF recipe I found needed buttermilk, which is a bit expensive to keep on hand if I'm not making it regularly.

So, this morning I experiemented. And it turned out great! Recipe to follow.
