At the start of every scanning session, I scan the IT8 chart before I scan the actual things I care about. Then, when I'm done, I use that IT8 scan to produce a calibrated colour chart I can then use to automatically correct every image I've scanned.
Scanning the IT8 every session is probably overkill, but it's a useful hedge against the scanner light changing over time.
