My thoughts have been similar, but target mobility, as I assume roads will quickly become impassible. RVs might not be ideal if they can't leave the pavement without getting stuck.
Part of my plan is living near a river and having a boat. Within about 30 minutes I can be in the water, and another hour will put me in the pacific ocean. From there I can target small islands and unpopulated sections of coastline.
Another thought is having a motorcycle and knowing how to ride them (and ATVs). This allows me use a mixture of roads and trails, get to far less populated areas, and most importantly use a lot less fuel.
I don't think it is a matter of having items stockpiled, but skills.
