I learned recently that sourdough has a unique taste depending on the region in which the starter lives.
Every region has a different combination of humidity, temperature, and other factors. Over time, local yeast strains well-adapted to the region will come to dominate the starter, producing a different taste in the finished product.
Apparently, sourdough is about as "locally-made" as it can get!
