I’ve never been super into eggs, but recently I had the desire to hard boil quail eggs. I remembered enjoying them in soup in China.
I love them so much more than hen eggs cooked in any style (except cake 👀). I’m pretty sure it’s because they’re so bite sized that they don’t feel overwhelming like a big mess of eggs can feel to me. Also they have a kind of creamy flavor and texture.
